Say you're writing them an email and you're a few years out of college. If they are Dr. I think it's easy to still refer to them as such, but otherwise should you just continue to refer to them as "Professor XYZ" or just call them their first name if that's how they sign their emails?

I've always used Professor XYZ. The title of Professor is actually above that of Doctor. To be a Doctor, one must hold a PhD. To be a professor, one must hold a PhD and be knowledgeable of the current state of the industry/whatever.
I refer to them as Dr. or Professor XYZ until they indicate differently. This is the tactic I take with all persons who are of a higher social rank than I am. I have had great success using this tactic.
I do the same.
Dr. or Prof. I love all of my professors and feel they have earned the title.
1) I am not 40
2) What would that even matter? When you go to the doctors do you call them Doctor? People work hard to earn a title and you call them by that.

The one's I'm indifferent toward: Prof. The one's I'm tight with: first name only (usually females) or last name only (usually males) - kinda like "yo, Anderson what's up? how's life? don't forget to gimme an A in your course" The one's who's guts I passionately hate: well if they're ever again in my general vicinity it would go kinda like this "motherfcker, I'm baffled your alma mater has yet to strip you of all your degrees given the disgusting bullsht you spread around"
