Quite often, it`s circumstantial and depends on the structure of your desk

For example, in cash equities, If all the major sectors your desk makes markets in are currently being managed by existing employees... you'll get to help one of the senior guys when he's away for a few days ... but normally someone has to leave the desk permanently for you to be next in line.

But if your a math whiz on the equity derivatives desk, then in a year or 2 they may move someone off of a particular book and put it in your hands. Case in point, Jason Strasser at Morgan Stanley. Poker whiz. Started managing his single stock options book even before he became an associate.

Just prove your worth when they make you grab coffee/lunch... and dont mess up when your asked to do simple tasks like close a book at the end of the day and calculate your greeks (delta, gamma, vega, etc.). It'll cut down your wait time tremendously.
