Personal preference, I'd choose the former 3.Overall,and I'd leave it as is. Alternatively, is there a major GPA you could use? This answer changes if your transcript lists only the institution GPA, in which case I'd use that. 4.Yes include, it matters 5.Depends on the length of your resume. It doesn't sound like the experiences are related to what you want to do, so only put enough to ensure you have a solid 1 page resume. General rule is 3 positions total, with more description for the better positions.
Under no circumstance should you include that. It may have a place in conversation or your cover letter, but not your resume

For #6, I'd put something about working xx amount of hours to pay for school under education. That's what I did and the people who reviewed my resume seemed to be receptive to it.

I don't have a job right now. I'll be applying for all types of positions. There are a lot of listing on my school's job board. Should I start now or wait until January?

I'm not in a rush. Concerned a resume might get tossed during holiday season when it wouldn't have in January.

That's not generally how it works. They collect resumes up until a deadline, then review all of them together. Waiting increases the chance of you rushing to complete multiple applications with a similar deadline, and doing a rush job of cover letters, etc.
