For the name I thought it was going to be like the CF-Valuations department of other B4s, but I've been having a look at the EVS practice of KPMG in the US and I don't really understand why is it under the Tax practice? Do they only perform valuations for tax purposes? Any insight would be much appreciated.

No, they are just like any other valuations group, however, EVS is comprised of 1) economics team (more quanty), 2) transfer pricing, and 3) valuations team. If you want to pursue finance go with number 3. It's mainly under tax because it's not just valuations but includes the aforementioned divisions. You do valuations for financial reporting and tax purposes.
