Aren't there laws that protect employees from the long hours and requirements to work on the weekends?

Bankers are exempt from The Fair Labor Standards Act. So are most high paying jobs and pretty much all managerial jobs. Bankers aren't paid an hourly wage so there is no need for overtime. Also, anyone who managed to get into banking definitely has other options as to a career-- that is, no one is doing banking because it was the only job they could get. So, no one is being taken advantage of.

My office is nearly 2/3's non-exempt, when ever I or my boss work a Saturday we get a weekday in lieu off.
Whenever I work a Saturday, I typically get to work Sunday also.
We call that double-exempt around here, pal.

People know exactly what they're getting into in terms of hours in banking. If you can't handle it choose another profession, plenty of 9 - 5 jobs out there.
OP, make sure you ask them about this during your first rounds.
Workers at literal sweatshops were also allowed to quit but they are also considered illegal. If someone died from overwork they wouldn't have a legal case against the firm?

You want to talk brutal, look at the oil field guys pulling 90hr weeks in manual labor roles. Then airdrop those expectations onto the north slope, Texas, a rig or some other harsh environment. Ibanking leads the pack for white collar jobs but long hours are par for the course in any high paying endeavor. Just the nature of the beast.
