List ALL Econ courses?
I am a rising Junior transfer student (non-target --> target) looking to get into a top finance internship next summer.
I took a number of Economics courses at my old school. However, some of the Econ courses were stuff like "Health Economics," "Public Economics," "Environmental Economics" and "History of Economic Thought."
I will also have Intro Micro/Macro, Intermediate Micro, Stats, Calc, and a Finance course on my resume as well.
Would it be advisable to list the Economics courses that aren't really directly related to Finance (Health, Environmental, etc)?

agreed with this. no need to list econ-related courses other than micro/macro. save that line on your resume for something useful.

back when i was an undergrad i had a section called "relevant coursework", the key word here being "relevant". i would only list classes that i felt were relevant to a positon.
not trying to bash public economics or evironmental economics... i would leave more obscure econ coursework off my resume, but would leave micro/macro economics, financial economics, and econometrics on.
