Wow, that is a lot of time for internships. I would choose 1 & 2 primarily because of relevancy and networking opportunities. Boutique Investment Bank in NYC (M&A) is a strong choice because you will be in the city and can network during your stay, especially since your goal is NYC IB. Training can be done on your own and on the job--prepare a lot beforehand and they should put you on nice deals. Option 2 gives you some PE exposure--skillset is transferable to IB, particularly the modelling (due diligence, valuations). The multinational nature of your internships is a good thing to have on the resume. Congrats!
