Meetjng someone for coffee is a colloquialism for just meeting up. Most people drink coffee hence the term. I'm sure in London it's "let's meet for some tea" or vodka in Russia. Just order whatever you want and talk with the dude.

I fulled expected this to be a religious thing, such as "I'm Mormon, and can't drink coffee." As mentioned above, order something else or nurse your drink. If nerves get the best of you and you still have to piss, just excuse your self or wrap up the meeting with a, "hey, I know your busy, and I have class/work/parent died..."
Get tea, English Breakfast & Earl Grey are my go-to when not drinking coffee. Ask for some steamed whole/2%/soy milk to mix things up.
Smirnoff works well if you want to avoid a hangover after the interview date.

Get water and say you just don't drink enough of it. Get OJ and say you need Vitamin C. Or get nothing and say, "I've been drinking too much caffeine lately and am trying to cut back but I really appreciate it" - then offer to buy them theirs.

The drink you order (or don't order, for that matter) will not affect the conversation, the way the person looks at you, or any other factor that is even semi-relevant to the purpose of this meeting. For Christ's sake man, get something you like to drink, and if there is nothing you like then get water or nothing at all. It's not a big deal whatsoever.
Can't believe this is a question. I hate coffee passionately but this has never even crossed my mind as a problem. If I think the person I'm meeting with will judge me for not drinking coffee, I'll get a coffee and fake to drink it. Otherwise I just get a tea...
