UK S&T (Trading) targetted CV - haven't worked a day in my life

Basically there are some big issues when it comes to writing my CV/Resume. I haven't worked a day in my life for an employer. During uni I picked up on sports exchange trading/betting and I continued doing this full time after graduation. Recently I've decided that I don't want to continue with this (various issues with liquidity, 60% tax, winners getting suspended etc.). Secondly, I didn't complete my AS/A-levels due to illness during sixth form and gained entry to my uni course via a 1 year HNC, so I don't have some stellar education section I could expand upon to reduce the work experience section.

I feel that my sports exchange activities are very relevant to skills (practical and mental) needed in a S&T role. It was far from straight up punting on a winner. I've also been retail FX trading (live account) for a year, and ~6 months prior to that paper trading. Markets and trading have become a genuine interest of mine gradually over the past 2-3 years.

The only way I've been able to come up with to show what I've been doing and give me a chance to talk about the skill/activities relevant to trading is to list what I've been doing as 'Self Employed' work experience. I don't know if the return on investment % (it will be a high 3 figure number, waiting for some documents to be sent to me so i can confirm and prove it) and drawdown comment make me sound like an arse and will result in a ding, but from templates and guidance I've read there is a big emphasis on quantifying things you have done in employment.

I was debating between a personal statement or an activities/interests section and went for the latter since most bank application systems I've looked at feature a little 'personal statement' box in addition to a submit CV section.

I'd appreciate some constructive feedback. This one might be a little out of the ordinary since I'm trying to make the best of having very little to bring to the table. I'm not forgetting that I climbed Mount Everest and was the Oxford rowing club chairman or something unfortunately. This represents me trying to get the best out of little to work with. I have some other activities/interests I could put including poker (going to some UKIPT stuff) and gaming/esports (PC games, a bit of travel in Europe to attend LAN tournaments). I decided to omit those since I don't want to come across as a gambling addict, and there are various topics on here saying that including computer games is a no-no.
