Advice - Renege PE Offer For HF?

Hello - throwaway account here:

I went through on-cycle PE recruiting 1.5 years ago and accepted an offer.

Opportunity came up to interview at a HF - FYI I have been up front that I have accepted an offer already throughout the process with the HF.

My concern is that I go through with the HF interviews, but the PE firm somehow finds out that i interviewed (ie, headhunter gossip, texting friends who work at said PE firm), and ends up yanking my offer.

Or, I end up interviewing and DONT get the HF offer, and then the PE firm finds out and yanks my own offer.

How likely is it that the PE firm would find out that I am interviewing? Has anyone seen this happen before?

Does it make more sense to just accept my fate and go to PE firm, and then try to find new job from there?
