Upgrading my ski quiver has me thinking, what are some of the age/cost prohibitive hobbies that I should do now, while I have some semblance of health and disposable income?
Things like heli-ski, scuba, and riding motorcycles all came to mind.

Still do it, but this will be last season for me as a team principal (it really is too expensive). Moto3 spec endurance (8-12Hrs) in our regional series here in the south (CMRA). We campaign two KTM RC 390s. First step is definitely to just go out to track days, they're a ton of fun, maybe even more fun then competitive racing. Plus you become a far better rider. Just google motorcycle track days near you and I'm sure you'll find a handful of companies doing it.
That's awesome, man. How big is your crew and how often/far do you travel? I'd guess costs run between 200-300k?
My dad is a huge car guy and is a member at NJMP, where there's two tracks. I've done a handful of days in a cager, but none on my bike. I have an R3 so I'd love to be able to push the limit on the little thing sometime. I'm in NYC now and jealous you have more riding days down south ;)
Oh god no, I could have never done it at that level. That's what I'd guess some of these top 10 semi-pro teams are budgeting. We're a middle pack group of hobbyists, 12 of us (6 riders). Budget is about 50-75K and that's 33-66% offset by selling the seats and marketing/sponsor money. But as suggested and therefore, 66% to 33% my dime for the fun. Basically have come to realize best to just buy a seat on a team, ha!
R3 is an awesome bike and big time competitor to us on the field. Season podium in points last year in our class was R3, RC390, R3.
It can vary. Our local track day company here in TX charges $170 per day ($395 for COTA) which is for 6 x 25min sessions (yes, this is more time than you think). You can probably get 3-5 days on a set of tires. 10-12 days per set of front pads. Annual service x2 per year (oil, brake fluid, non-coolant radiator fluid). Maybe budget in up to $1K for modifications you may end up wanting like a quickshifter. It's probably cheaper than you're thinking, but isn't cheap by any means compared to just riding your motorbike on the road.
At least here in TX, with exception to COTA, a 300CC/400CC bike is THE most fun you will have on the track. They're stupid cheap to run and will teach you how to really ride (momentum versus just twisting throttle). You're 10/10ths everywhere and you'll have a ton of fun passing the bigger bikes. 600CC is as high as you'll want to go.
Mountain biking. My wife and I moved to the Rockies for it. Then we bought expensive bikes. I would also like to get into kite boarding, gliding (soaring), and sailing.
Karting. Debating saving up for a vineyard or putting my kids in the sport.

In college I sold super bikes at this boutique shop. I remember a few going for $12k. Are they really worth it?
I spent three weeks there before getting into an argument with the manager and quitting on the spot. So I never really got into it.
Also, racing anything is quite fun. Cars are my forte.
Organizing warehouse parties (techno, house). Good money making hobby, until it isn't.
Guns are probably up there too in terms of my costlier hobbies. I may also impulse buy an OG Jeep Wrangler YJ as my weekend car to cruise SoCal. Probably a horrendous idea, but I've worked my fucking ass off for the last year & a half and rarely rewarded myself.
I would take up rugby again, except I do not want to go bankrupt from a hospital visit (or fly to India to do the surgery).

I'm looking at taking stunt/military style driving courses. Learn to drive like Jason Bourne stuff, or at least do an ebrake 180.

Fucking awesome! All the places I looked you could not do tactical stuff without being LE.
Skiing is still best hobby! So many great places to visit, so many annual return visits (Jackson Hole, Whistler, Revelstoke, etc). It keeps you healthy, and you can never get tired of it. Always be upping your game, and there's always Heli-skiing! Plus there are some really good adult ski camps, you're never too old or too good to learn something new!
Start bouldering at a local gym. From there move to top rope and trad. Once you get into multi-pitch climbing, the fun really begins. Relatively cheap to start.. gets more expensive the more you destination climb.
If you want a challenge I would do Ironman Triathlons. They are costly, a great personal challenge and super fun because you can travel the world alone or with friends. Certainly something to consider.
Traveling to more exotic, expensive places. Ski in Argentina in our off-season, or in France/Switzerland ($$$$). Go to Ibiza. South of France or South of Spain during high season. St Bart's in winter.
Trekking kinds of vacations - Machu Picchu, Himalayas, Angor Wat, etc. Really any travel is just easier now.
These are things that are easier before you get married, and/or definitely before you have a family!
Argentina is a bit trickier imo-- have to go during the warmer part of the year.
Definitely - I'm not that hardcore of a ski addict to have made the trek, but I have friends who love to ski and will go there in our off-season. They said it's absolutely marvelous.
