Why? At the end of the day he's still doing what all the other applicants are doing - groveling for a job.

Humility. He's going to be double decker shit sandwiches for a couple of years on the job...he's saying he'll do it with a smile.

This isn't a standard cover letter, this guy actually emailed it directly to someone he met. Of course he read it.

From the email chain, it looks like they actually gave the kid a phone interview.

I do want to emphasize that the real reason this letter works is because he actually networked beforehand in a meaningful way. If this had been a cold email, it'd be humorous but far less effective. Having actually met and interacted with the person he emailed in a reasonably meaningful way goes a LONG way towards helping him out.
