I'm getting Coffee with a banker this Monday. It's the first time that I'm meeting with her. She's a VP. What should I wear? Suit -- or would that be too formal? Should I just rock biz cas?
Business Casual. Don't wear jeans unless your in a part of the country where that's okay. Don't wear a suit and tie either. This isn't an interview.

Well this here changes everything.
I'd do with at least business casual. It's always better to be overdressed than under dressed. If this meeting is during the week, the VP will be wearing his work clothes.
A Mr. Magoo mustache, clown shoes, and a Batman cape.
Business casual, of course. He knows you don't wear a suit regularly, so he would probably know you wore the suit just for him. That's a bit bent. If you're going to be a bender about it, you might as well wear assless chaps, a ball-gag and and gimp mask.
Just put it all out on the table up front. People respect that.
Next time you cite my facial hair, I expect royalties.

Just make sure you tell him how much money your suit is worth frequently and say "Come on!" a lot
You're in London. Where a suit. There is no such thing as business casual in London.
