Between Undergrad & Grad School: PE/VC/IB Summer Internship Search With Very Unusual Background

Hi everyone,

I would appreciate some advice on the summer internship search between undergrad and grad school.

I will try to keep this vague since I have a very unusual background.
Education:

Political Science (public policy concentration) with geology minor from an average school. Focused on natural resources policy 
Academic research:

Multiple research projects on law, policy, risk, ESG for extractives (oil and gas, mining) and investment in them in the U.S. and emerging markets under both Political Science and Geology departments.
Work experience:

Interned for boutique VC company focused on mining in emerging markets. Worked part time out of US office and full time in developing country.
Interned for academic research center at very prestigious school focusing on investment/sustainability in the energy industry and the laws around that for primarily emerging markets.
Interned for well known non-profit in environmental world focusing on energy industry.
Interned for recruiting firm (finance/accounting/engineering)
Certifications: CFI's Financial Modeling and Valuation Analyst.
Grad School: Applied for business masters degree program (not MBA), at highly ranked school.
Ideally I would like to wind up in IB or PE for the energy industry (preferably the extractives (oil and gas, mining)) after grad school.
However, I am having trouble finding suitable internship opportunities with PE/VC/IB companies in the U.S.. It is mostly because of my very unusual background. I was wondering if anyone had any company, division, or types of internships to research online?
Or, does anyone have any suggestions to leverage my unorthodox background into an internship? I am trying to apply for mining, oil and gas positions, but I have also thought about trying to find operational risk, ESG, or sustainability focused positions.


I would appreciate any advice or help on the job search!
TLDR: Poli Sci major, geology minor. Boutique energy focused VC experience in emerging market. Lots of academic research. Strong w/ mining industry, risk analysis, ESG, sustainability, & emerging markets. Not a lot of finance. What types of positions should I look for?
