Assuming I get a FT offer, can I extend the offer deadline to November 1st? According to my university’s policy, FT offers after internships need to give at least until November 1st. At the bank I’m interning at only gives me two weeks. Would banks have to comply or is it more “take it or leave it”?

Depends how close your recruiting team is with your school. If your firm does OCR at your school you have a better chance but if you’re at a non target/non core school you probably can’t get them to abide by your career offices rules.
My offer was good until Nov 1st even though the bank gives 1 week. But it was because the school recruiting captain wanted her son to get into the school.
I think those university recruiting policies only apply to banks that did OCR, so unless you got your offer through OCR...out of luck
