Getting an internship after July?
So the business school I am attending has a mandatory exchange period included in the undergraduate degree. I just found out I will be going to china in the spring of 2019, which is very exciting. However the spring semester at this particular school is from February to the middle of July... My goal is to get a management consulting internship for the summer of 2019 in Europe (where I am originally from), will it be possible getting a 10-12 week internship after July or should I just focus on applying to offcycle internships?

My own experience is that most internships in Europe (use this term carefully as there are huge variations between countries) is that most summer internships start in late May/June so off cycle internships are probably your best bet!
As I said this can vary depending on where you're applying but if you reach out to people in your target city/country there is a chance they can arrange a start date to suit you in July!
