if the scholarships are at least somewhat large or hard to get, list them all on one line under education and get rid of descriptions ("Recipient of merit-based [$xx scholarship A] and [$xx scholarship b]")
if they aren't reasonably prestigious (full tuition merit award or similar), get rid of them altogether

Don't let them hate on the interests section... the interests section can be key... just make sure the stuff on there is actually worth having a conversation about... My interest section was "Recreational basketball and squash, snowboarding, and microbrew and wine tasting" we talked about wine and beer in half of my interviews and it was awesome... the ones I didn't talk IPAs with I talked squash with as half of the VPs/MDs play...
