Why would they put "Please consider the environment before printing"?

 

It's part of the recruiters standard signature, not all that surprising actually as many people have these types of messages in their signatures.

The 2nd item is standard and attached at the end of every email from most professional services firms. Your recruiter had no ability to send an email without that attached.
