How to apply to shops that don't show any information about the roles

So there are a good few companies out there, decent ones who's job application site is a paragraph saying, email [email protected].

How would you structure a cover letter (if you would write one at all) to outline your interests in a position you don't even know exists?

I'm thinking of matching up my qualities against the job requirements of the norm for these kind of shops, but am concerned that would be unimaginative.

Anyone done this before with any success?
