Let me know if i'm misinterpreting, but it sounds like you're trying to decide if you should do another internship in the Spring before starting your summer internship.
It could be good experience for you, but it won't really "add value" to your resume. That being said, if you didn't get a summer internship in the industry you wanted but you get your target industry as a spring internship, then that could be helpful for FT recruiting.
Assuming that's not the case, then just enjoy the time.

e.g. deadlines soon. Should I write, "incoming XYZ off-cycle analyst" and "incoming ABC summer analyst" on my CV when I apply to that firm? Does it make my profile more competitive?
Including "incoming ABC summer analyst" can make you more competitive for the spring internship, assuming the firm isn't expecting spring interns to convert to summer ones.
Not sure how "incoming XYZ off-cycle analyst" fits into the picture...
My opinion is don't do the April-June internship. You have enough on your plate and the marginal value added to your resume is very low.

Dont do April - June, youll burn out. Unless its the exact one you wish you had, in which case apply and do include both offers on your cv.

I have reviewed over 2,000 CV to help HR select spring / summer / GP / summer Associate candidates when I was in M&A, so here are my key takeaways:
Mention your spring / summer / off-cycle internship if you have already secured it. You would be surprised to see the number of candidates who indicate there "might" get a spring / summer... don't do that, that looks very messy!
Mention the name of the division or the team you are going to work for if you like it, as it may help you secure an equivalent job / internship somewhere else (e.g. Summer internship with the Oil & Gas coverage team
Don't describe the tasks you are going to do during your future internship. 1) You have no clue what you are going to do 2) It gives recruiters the impression you have already done the internship 3) They feel frustrated when they realize you are at best day dreaming 4) You can be almost certain your CV will be excluded from the pile
As stupid as it may sound, your CV is the first contact recruiters / HR are going to have with you. If this impression is not positive, as there is no intuitu personae at this stage, there is no reason to select you.

Do you think i could put on my CV that I had been selected to attend 2018 spring weeks internship for BBs? I was wondering, because I will have to apply for investment banking internships before the spring week and I thought that a big name on my CV might help me pass the screening ( of course, it's nothing for the moment since the spring week has not begun yet and it's far less relevant than a summer internship offer, but my question is purely strategic for the screening)
Going off of this, does HR usually find it okay to do a spring internship somewhere else if you've already secured a summer internship? Or does it conflict with the NDA in some way?
similar but kinda different situation: If I'm already doing SA at a MM (Piper, William Blair, Houlihan not RX) and I have a 3.3/3.4 do you think doing at spring internship at a sell-side M&A boutique will make me a stronger candidate for Harris William's M&A boot camp? the resume screening and interviews would be about 1 and 2 weeks respectively after the spring internship starts.

Sophomore here from non-target, secured SA role at large bank (think Citi/J.P./Baml within FADP program. I got kind of screwed this upcoming recruiting season (fall 2018) as banks are already interviewing sophomore for Junior SA roles for 2019. Was wondering if it would be in my best interest to include the FADP internship I will be doing within my resume, keep in mind i have no other relevant finance experience.

Not a prospective monkey but i'll offer my thoughts. If I understand correctly - you want to know if you can include your summer 2018 internship on your applications for a summer 2019 internship and I think the answer to this is yes. Don't try to over describe what your are going to be doing this summer... unless you really know. You can put the shop, position title, the dates you'll be working there, and a brief desccription (if it is not appartent).
