Invited to Dinner by Director, What does this mean?
I moved to NY 3 weeks ago and have been networking my ass off. I have had 5-7 "meetings" per week. These have not been interviews for particular jobs, but more like "here I am, this is my experience, this is what I want to do, here is an investment idea." - I go all these by cold calling.
I met with all the bulge bracket banks and a few hedge funds to discuss a particular derivative product I am interested in getting involved with. This product is very thinly traded if at all, but I am very interested in it and I think it has a lot of potential. The banks have like one guy who oversees the product.
A BB Director I met with my first week here told me to stay in touch and let him know how my other meetings went. I circled back with him on Monday with a 4 page letter telling him about the derivative products potential and my findings, and at the end asked the bank to hire me for an Analyst position for X salary and I would do Y responsibilities and my goal would be Z. He was in London all week, so he circled back with me on Friday after I touched base AGAIN. He said"We are not hiring right now - but there may be possibilities down the line. Could I invite you for dinner? Monday work? "
WHAT DOES THIS MEAN? WHAT SHOULD I EXPECT? HOW DO I PREPARE?
This is obviously another opportunity to sell myself and discuss the markets. Will he make me an internship/temp-to-perm/perm offer? Assistant to him? He is a Director so I feel like he could get me hired if he really wanted to.

Pretty common. The bank is not hiring like he said, but he's interested to hear more about your product and thoughts and if it'll indeed fit in some position in the firm. Obviously try to make a great impression, but I wouldn't expect a process for hire for be run or something to emerge quickly.
What level are you at? Do you have a well differentiated set of skills? If you have a legit set of skills this dinner makes sense, if not something else might be going on - lunch or drinks would be a more normal setting for a meeting like this

I am interested in and know a lot about property derivatives, been around real estate my entire life and see them as the last frontier - this Director is head of property derivatives at the bank. I took him a basis trade idea with property derivatives and CMBS.
Make sure he doesn't try to jack your idea...
