My 2 cents as a LBS 2019 MBA candidate:
-Your MSc should be enough to upgrade your lack of undergrad brand name.
-Your GMAT is brutal.
-I think that being British helps. LBS needs locals too.
-"Policy analyst for the government" sounds unusual, making your profile exotic.

The only weak point I see is that you only have internships. You need full time employment experience asap, and you should get at least one promotion before applying.

Yeah I aim to work for two years.
I was just figuring out what career I should do.

I'm looking at careers in the civil service i.e department of work of pensions.
The civil service is one of the most competitive schemes in the UK.
