I lived in slc for ~5 years and would be happy to answer specific questions you have.

Ops is not going to be a glamorous role but you get a huge name on your resume and there is lots of opportunities if you stick it out. People give ops a bad rap but if you get involved with projects you will grow a great network, enjoy your work, and move up quickly.

SLC is going to be MUCH quieter than NYC (or any big city) but it can still be fun. People will sell you on the outdoor lifestyle, which is great but if you're not into outdoor activities you can still have a good time. There's a great brewery & food scene as well as a growing nightlife and the downtown area is very much mot Mormon, although other areas are heavily Mormon.
