One Man Shop

Say, I have a decent connection a one man VC shop with AUM around $100MM in NYC. If after undergrad I get an unpaid part-time/internship at the shop for a year and have decent modeling exposure.

How will school like LSE and NYU value the experience?

How will a BB IBD value it?

Would be good experience either way if you hav enothing else.

And VC sounds like an exciting area to get into, so its gotta help for that even if you cant get into a bigger shop just yet for a internship

If you have nothing else, you should definitely run with it. That said, BB IB won't be terribly impressed as it is not direct experience - plus, since you will be doing this post U Grad, you won't have the opportunity to interview with U Grad senior for incoming analyst-level positions.

For NYU, are you asking about B school - if so, then it is a step in the right direction, but you will want more than just 1 year of unpaid experience. You will need to land a FT offer out of it and try to attain some quality experience (as in playing a big role, especially in a currently 1-man shop). If you can build 2-3 years of quality experience, and gain some leadership/strong experience in a volunteer effort/other ECs, you will start to become much more attractive. Remember, with B school, it is really about selling the experiences in the essays and being able to point to and articulate said experiences. There are so many factors to consider when it comes to B school, but at least in terms of WE, you should be on decent footing.
