Of course, a FO role would be ideal, but what you have mentioned does sound like interesting work and valuable experience overall. Add to that the brand name of the AM place and you got yourself a strong application for next year's recruitment - a risk management internship would work even more nicely for an S&T gig.
In short, yes it will look good and yes you can leverage it to land a more research orientated role.
