Lots going on here, so let me know if I misinterpreted anything.

You interned in product development at an AM, most likely will receive a return offer, but unclear on what path to take given your interests in consulting, entrepreneurship, and maybe IB.

I don't think going back will hurt your resume, but yes I think you will be 'missing out on experiences'. Don't marry the first girl that finds you cute. Especially given that you're interests are all over the place.

If entrepreneurship is your ultimate goal, go the consulting or IB route. I'd say consulting because you seem lukewarm about IB, and I don't think being lukewarm about IB or anything for that matter will lead to a positive experience.

I'm not sure what comp looks like in your role. But yes, progression in product development will be opaque compared to a professional services firm.

Unless I'm misunderstanding product development, you're not really involved with the investment selection process. Are you mainly doing industry research and understanding competitors? This isn't a job people would kill for. There are many functions on the buy-side, some more desirable than others. However, especially since you're an intern, the role is definitely a good learning experience.
