That seems a bit rash. Accept and sign, sure, but what about those who are taking you on board?
I say this from personal experience. As soon as HR informs people that you signed, they don't give a fsck about you until you show up for your first day. Every moment you spend talking to them beyond that is time wasted for them, and they aren't happy about it.
If you really feel obliged to thank people, do it over email, or leave a quick voicemail.
