very expensive steaks (wagyu, 45+ day dry-aged) aren't very good and lean cuts (e.g. filet) are generally better with pan sauce or a french sauce like bordelaise
you can probably make a better steak at home with costco prime beef, a pan, and three ingredients (salt, pepper, garlic powder) than you can get at most high end steakhouses
