Where does my STEM experience get valued the most?

I am graduating next year and considering applying for quant jobs. However, "quant" (as you know) is too generic for me with little financial background.

I focused on studies on signal processing and statistics. I mainly worked on maximum-likelihood estimations, regularized quadratic programming, Monte Carlo (a lot), Fourier transform. I am also involved in other projects such as nonparametric fitting, PCA and computer visions, I have good knowledge of them, but did not play leading roles in those projects.
On a day-to-day basis I used a lot of C++ and MATLAB. I had some experience with Java/Python etc, but will hopefully not use them for interviews.
Besides those I also have experience in hardware development, but that is probably irrelevant.

I am hoping to get some advice: what companies (e.g. IB, HF, PE. etc) would mostly value my experience? Also, what job types should I focus on (such as researcher, dev, analyst)?

Thank you!
