I was fortunate enough to receive a job offer. Now what?

Background: 5 years experience in CRE as a broker, CFA® charter, semi-target BBA undergrad
I have 2 potential job opportunities. I have an offer from job A and still have two weeks of interviewing left with job B. I want to know what are the CRE related growth opportunities for job A and whether I should wait for job B at the risk of losing job A? This is in Canada (where salaries are generally lower than US).
Job A: Senior underwriter at a lender focusing on construction financing. Comp is $90k+10% bonus. Since its development financing, I will be involved a large variety of projects and the team is really cool. It’s been hard to find whether the offer is fair for the market and my background so I’m 60/40 on this…
Job B: Asset manager for a hotel portfolio owner. I expect comp to be around $100k to $130k based on my research. This is the type of role I have always wanted to try but don’t want to be pigeon holed into hotels since it is a specialized property type.

I would recommend that you thank job A for the offer, express your excitement/gratitude, and ask for some time to think it over. They may pressure you for a deadline, you obviously want to give yourself as much cushion as possible--you can use a faraway vacation, work deadline, etc. to help buy more time.
Immediately notify job B that you have received an active exploding offer and are still very interested in hearing what they have to say. More often than not, this will light a fire under Job B...you are given instant credibility vis a vis someone else's vetting and are now the hot girl at the dance. Or, you will immediately recognize Job B has an onerous vetting process that is going to take significantly more time anyway, at which point you can decide if Job B is worth potentially giving up Job A.
I have been in this situation before, had a job A exploding offer close to expiring, and called job A to basically say "respectfully an truthfully, I'm very intrigued by your offer and appreciate it sincerely, but this is a major life decision for me and I need to wait and see what job B is going to offer." People appreciate honesty, they were fine with it.
Thanks for your advice! I wasn't selected to move with Job B and Job A works on some pretty cool projects. I will try Job A for a bit and see what happens.
