You really fucked yourself. They probably won’t notice, but at any point during your time at this company, you could potentially be flagged and fired. It has happened to CEOs over resume lies many years prior.
But, this could be deeper. Maybe you don’t know Economics well enough to do the position?
You might think of just sending a casual email to a nobody in HR with your updated resume and avoid describing the update, but put all your correct info in there to cover your ass. Just send and say ‘I have attached an updated resume for your files’. Then there is some paper trail to righteousness.
If you do nothing, I hope you feel comfortable living like Damocles with a dagger always hanging above your head.

Depends on your school. For instance when my employer did their background check, all that came up for my education was bachelors of science, 2018. Didn’t mention my major and it’s not even on my diploma, yet I still majored in finance.

I had on my resume double major in economics and math. After i got a ft offer, realIzed i could drop the math major to a minor and graduate early to save 20k. Never came up and honestly didn’t think twice about it so you will be fine
Yes. Technically, if you hadn’t received your diploma by the time you sent in your resume you could argue that you changed your mind or rearranged your credits or talked with your advisor etc. All are reasonable actions and perfectly plausible (i.e. I put Econ on the resume I sent you guys because I was going to switch majors if I got an offer from you but then changed my mind). If you had already graduated at the time you sent out that resume well... there’s no fudging that’s, it’s a blatant lie. The comment which suggested you send your updated resume to HR is probably the best advise for you either way.

Another angle, if questioned, is to claim public policy is essentially a type of econ program at your school (I'm assuming they are in same college/school, if not this is a bad idea). I think a public policy major FROM an econ program is technically a form of an econ degree.
Note, this is essentially saying I am too dumb to know what I'm actually majoring in, but prob better than admitting to intentionally lying.
