Worked as a data analyst for a small retailer
4 month Corp Finance full-time internship at an energy company with 8 billion market cap in Canada that is expanding into renewables
At the same time did a part-time internship for a small PE Shop
Advanced Excel, VBA, financial modeling, SQL and python skills.

If you want to work in Dubai you need strong ties (school, family, grew up there) and not just "that would be a fun summer vacation"
If you have no ties to the area then you're going to have an uphill battle. Also GPA is king in IB and you don't mention yours
I have a few connections in Dubai but I have not spoken with them a long time, I could try it out. My GPA is a 3.5, but not including the first year of university it is 3.7 so its been solid and growing. Also, I read that this bank has less priority to GPA and has its own assessments.
