In my experience, RA positions are pretty common which means it might not be as influential as you think. Is your prof a big name? That could probably change things.
If I saw a resume with academic research, I wouldn't care about who the professor is. If the topic sounds interesting/relevant to what we do, it might give you a slight edge but won't overcome any shortfalls from having a low GPA or bad internships
Actually, this is not true. On McK website, they ask you to mark the top lab or top department on your resume, cuz they would not be able to know every top lab or top department. That means they would consider the top lab as a prestige, from what I interpret. But I may agree that 3.5 GPA is a cutoff. I don't know, there is no official words out there, but people keep saying that.

hmm I thought RA would sound good but im not sure how much of an impact a person could have as an RA

So what would be a better use of the resume space, volunteer work or RA?
I would say personal impact and achievement will be more important than what kind of work you did
