From what I've seen on this website in terms of people asking whether to drop a class or not, it is not a big deal if you want to preserve your GPA, however, with business school on the line it could be better just to suck it up and do whatever it takes to boost your grade. Although my thinking would be the consulting firm you'd be at and your performance within before b school would be ahead of your grade in a financial accounting course.
Withdrawing 1 class won't kill you. Doing it multiple times might look a little fishy. One of my mentors got in HBS and had to withdraw from a physics class when he was in undergrad at a school nowhere near the caliber of your school.

it wont show up as a drop on my transcript and there'll be no record of me taking it. i think im going to get a B+ in the class, but the problem is, with how my other classes are looking, that might drop me below a 3.5
If it won't show as a drop and it is what is standing between you and a 3.5, drop it. There are plenty of people with STEM degrees, like you, who are accepted into top tier MBA programs who haven't taken an accounting class.
Financial Accounting is one of the most important classes for businesses.
To believe dropping this course on the basis of GPA is optimal, you would have to argue that the college degree has almost no educational value outside of serving as a signaling mechanism on the basis of GPA.
I really think you should take this course if you are going to be a management consultant.
