How could I recover from a late start in undergrad?

I entered undergrad thinking I was going to be a doctor and realized this past semester that that is definitely not the case. I now want to enter finance in a quantitative position but feel like I am behind the curve and am not sure how to catch up. I'm now entering the second semester of my sophomore year and am trying to start my new path.

I plan to do an applied math major with minors in comp sci and econ. Other relevant information: I'm at a non-target/semi-target brand name school (top 30 general rankings), 3.1 GPA currently but i'm confident I can get that up now that I'm not taking natural science classes, no internship experience and only worked one job in my entire life that I can put on my resume.

I don't think I can get an internship this summer but next year I'll have probability, statistics, real analysis, C++, and econ courses, so I have a chance of getting one summer after junior year. My question is essentially what could I do to start catching up and have a good chance of securing a finance job by the time I graduate?
