How to gauge the business prospect of a consulting firm?

I'm talking to a Partner of a boutique consulting firm. I want to know if they're having a healthy deal flow and looking for a long-term employee. I'm afraid that they might fire me if there's no business or once there's no longer a need for my specific skills. What kind of questions can I ask without sounding obnoxious?

I would ask how many offers they plan to extend this yr and how many did they hire last. Then, try to get in touch w/ someone who was hired last yr and get his take on the situation. Maybe also ask what's the typical utilization rate.

I don't think they'd let go of you unless you were unstaffed for like 3 months, because recruiting is an expensive process. If they were looking for short term, project-by-project roles, the firm could easily find independent consultants/contractors.
