Brace yourself, because this might get lengthy.
SLC is no NYC, but it's not the dead-after-six, boring small town that people think it is. There are bars and clubs, good food scene, and even some decent microbreweries if that is your thing. Lots of culture, especially downtown and up in Park City (25 minutes from the GS offices). There is a lot to do, especially if you like outdoors activities. If your weekends are free, there are tons of things to do and see within hours of the city as well.
Housing is extremely inexpensive. You can find good 2-3 bedroom places for $600 and you can even find houses to rent for ~$1,000 really close to the GS offices. Utilities are generally pretty inexpensive as well, though gas in the winter can be pricey in older places. You'll likely want to find a place in the Avenues, though (East of Downtown, NW of the GS offices. Most of the young professionals will be there unless you can pool your money for a nice house.)
Having said this, you will absolutely want to find a place with good air conditioning and heating. It gets very hot in the summer and very cold in the winter, so try and find a place that you don't have to care for the landscaping.
Public transportation is okay but you will probably want to invest in an automobile.
I think some would agree that girls in Utah are far better looking than girls from many other places.

Unless you are wanting to pay off student loans insanely fast, there is absolutely no need for a roommate in SLC. You could easily save for a down payment and get a house within a short amount of time if you want. Housing there is insane cheap.
I was thinking of apply for GS' controller division there but I live in California and I was concerned I'd missed the weather, beach, lifestyle, civilization, etc. I'm glad to hear there are things to do there though.
I've been skimming through posts online for housing out there and it looks really cheap.
A quick cost of living calculator (not incredibly accurate probably but good for general reference) will show you that $50k in SLC is equivalent to like $120 in Manhattan, $86k in SF, $62 in Chicago.
Most of this is due to the fact that you can rent a 1.5k sq/ft apt for under $1000 or buy a 3000 sq/ft house for ~$250k.
@byouno93 - Make no mistake, you would be giving up several luxuries you enjoy right now in California if you were to move to SLC.

This movie is pretty much the exact opposite of anything you'll experience in SLC.

One thing you have to keep in mind is that SLC is absolutely dominated by Mormon culture and values. You'll have to get used to that really quick. For instance, I would suggest holding off on asking your coworkers to go for drinks, or even talk about drinking or other vices in the office, until you get to know them better. Also, expect to be passed over for promotions or special projects if your management is Mormon and you are not. Mormons are very polite and friendly, as a rule, but they can be incredibly cliquish and judgemental.
That said, SLC is an awesome place to live, with a very high quality of life. Forget about the club and bar scene and get yourself a pair of skis, a mountain bike, and a kayak. It's also maybe the best location in North America for hang gliding and land speed record breaking. Get out to Bonneville for the speed trials if you can. They run the first weekend in August and again in October, I think.

Look in the Avenues (north east of City Creek Center. If you are lucky you will find something close enough to walk. I had a 1 bedroom with new carpet and paint near memorial park (a really beautiful area) that was a 15 min walk from 222 main, rent was $550/month with fairly cheap utilities. If your looking to move this summer, try knocking on doors in an area that you like. Chances are there will be U of U students looking to get out of rental contracts for the summer. Enjoy the Wasatch mountains, they've got a lot to offer, especially if you like to ski.
