College Major Question/Personal Opinions

I attend UIUC and am currently a sophomore majoring in Economics and am trying to pursue a double major in Mathematics. My biggest problem right now is with time. For my Economics major, I only need to take 5 classes and for math, I need to take 9 classes. I have also been trying to minor in business which would require me to take an additional 6 classes in Finance, Accounting, and Business Adminstration that have to be taken at UIUC and not at a community college. Lately, I found out to do all this would require me to max out each of my semesters with courses and attend summer school. I am at the point that I do not know if the time I am wasting with all these courses is worth what I get in return for my starting job. My GPA in Economics classes is around 3.8 and for math it is about a 3.2 and for my business minor courses, I could pull off a +3.8. Should I continue this process of trying to double major and minor or should I stop trying to double major in one area or stop minoring? Do employers in the business field (finance mostly) like to see a degree in mathematics or economics more and how is a minor in business seen to employers? I like both math and economics a lot and feel both go hand in hand. I though about minoring in math and that would acquire me to take only 5 addition courses. If anyone has any advice given my situation, I would appreciate it since I have to make my decision pretty quickly.

No need to double major. It seems like the work load isnt even close to being worth it. Internships and work experience is more important. Just minor in math if you're really interested.
