What is the protocol on job hunting for bigger/better ibd jobs during your first year stint as an Analyst at a sub-par IBD firm? If you get caught will you get eaten alive or does this happen all of the time?

Just make sure you tell NO ONE at work, even if you're friends with them.

Stick it out for at least a year (18 months if your role is pretty technical). Then start job hunting.
Once you're established, your boss won't be able to afford to take it personally if/when he finds out you're leaving. He will want to keep you if you don't get an offer at another firm.
Also, what goes around comes around. It's always good to stick it out with an existing employer- he made a commitment to keep you for a year or two if the position worked out- even if he finds a waay better employee; you ought to be doing the same.
Work hard, play hard.
