So my school is offering a 5 week finance crash course on valuation, accounting, etc. this spring. Given that I have an econ (but not finance/accounting) background, would taking this help me next year as a FT analyst?
My initial reaction is that I'll be adequately trained this summer, so there's no need to bust my ass now.

Guys, this is a job where all the maths youll need to know is add, subtract, divide and multiply. Take it easy and get to be buddy buddy with an MD's kid in your college - that will bet you a lot further than being one step ahead of your peers when you start. Anyway, whatever a five week crash course teaches you, your buddies will cover in the first week of training anyway. Don't waste your time. Seriously.
Well, how will we be able to answer the questions in the interviews if we don't know the important concepts and strategies of finance and accounting?
For newly hired analysts, would you guys recommend doing an Excel training/valuation class like Training the Street, or will the training I get when I start be good enough?
