Short Term PE Abroad?

I am graduating early, and starting at a BB RE IB group in July. I plan on traveling next semester (ideally S America and Mid East), but thought it would be interesting to find some short-term work/ volunteer opportunities (paid or unpaid) that are either rewarding to me personally or my career. I've been looking at a lot of options, but haven't really explored the PE one to the fullest. Any suggestions on how to pursue this? Obviously RE PE would be ideal.
Any random suggestions, PE related or not, are welcome; thanks.
