Catch 22 where I'm not helpful but also not learning anything so that I can one day be helpful

I'm in the classic Catch 22 where I'm new to the job so my Sr Associate frequently takes over things I'm doing for second iteration (or handles tasks from our VP himself) and just does them himself in order to push them through. However, by doing so I'm not learning anything. I'm happy to stay up till 5am struggling on simple tasks so that I can do them better next time, and communicate my willingness frequently, but I feel like I'm neither learning nor adding value.


Thoughts on how to approach this situation?
