How bad is it to spend a year on a metaphorical beach?
How bad is it to leave one's first job after completing ~two years and chilling on a beach somewhere in the middle of nowhere for a year? Does it matter how prestigous the first job was or is it a red flag no matter what to relax for that long? Is it actually "impossible" to find a job afterwards? (read: non-target with no internships that has a GPA measured in bps)?
(*beach can be anything not career related and not objectively constructive, like studying ancient art made from styrofoam or something)

Hard to answer. It's an atypical move career wise. Long time professionals may take sabbaticals, even that is rare.
Just register a shell company and when you come back, say that you were working on a startup that didn't work out. Not uncommon these days anyway.

Hey Guys,
Been working in the FX department of a MM bank for a year and a half now. Started off in the back office and after a year moved into a middle office working directly on the desk.
However, I have always wanted to break into IB or ER and have been trying for a little over a year now.
I networked a pretty good amount and got some interviews, however haven't landed an offer.
The feedback I received from most interviews was that they very much liked me, thought I was a good fit, and knew my stuff, however there was another candidate with more direct experience that would allow them to hit the ground running.
At this point, I've become pretty fed up with my current position as it's not what I want to be doing, nor am I learning anything that is necessarily marketable or related to the work I would like to be doing.
I would like to go to business school, however I don't feel it's worth it unless I can go to a top 20 school and feel that my work experience will need to be much better than what it is now to gain admission to such a program, so I feel that bschool is another 2-3 years away maybe (just turned 25 this month).
I've been thinking about maybe quitting this job (after I have everything lined up of course) and maybe teaching english abroad for the summer, or something along those lines.
And then for the rest of the year moving to either Vancouver or Salt Lake City and getting some type of job there, preferably business/finance related, as well as skiing as much as I can.
I've always wanted to live in another country and I've always wanted to move somewhere out west to ski for a winter.
At the same time, I'm worried that doing something like this will reflect on me poorly, rather than be viewed as interesting experience.
Do you guys think doing something like this would be insurmountable after my year is up if I wanted to still break into IB or ER or prevent me from gaining admission to a top 20 business school?
I don't know if I'd say insurmountable but my best guess is it will be negatively viewed by business schools.
