Say a month has passed since you met up with that alum for a chat. You want to make sure he/she doesn't forget your name, so you decide to send a follow-up e-mail. What do you say in those kind of e-mails? I don't want to seem like a pest.

Rule #1: Never ask or hint
Rule #1: Never ask or hint about a potential job when networking.
You should send an email with a question about a certain topic you think they could answer for you. You've got to have some questions about a certain industry. This achieves your original effort to re-connect with them for another lunch/chat.
Try to phrase it while simultaneously making them believe you view their experience in a high regard without kissing anybody's ass.
ex: "I was wondering about blank and I believe YOUR exp & knowledge with blank could help give me a better grasp of this particular question."
Something like that
Here to learn and hopefully pass on some knowledge as well. SB if I helped.

But isn't it kinda obvious to them that I'm emailing them just for the sake of e-mailing? They're probably thinking "This kid doesn't really care about the questions. All he wants is to get me to remember him so I can help him down the road."

Yes you're right they could be thinking that. Even if they are, why do you think people can be very open to meeting? What I'm saying is, networking wouldn't be vital like it is if the people with the power to help you weren't willing in the first place.
