I know for a fact that I will be an Economics, but since I only completed one semester so far, I cannot declare a major. Do I write undeclared on my resume or put Economics?

You can just label it as
You can just label it as "Intended Major: Economics."

I'd just say "Economics" if
I'd just say "Economics" if you're already on that track, declared or not. I've only seen intended/prospective used in the case of majors that need to be applied to, in which there's a high change you might not get in (ie, Haas at Berkeley)

Just say Economics. You
Just say Economics. You don't have to officially declare it at this point in your progress for it to be your "major." You will be majoring in economics, and that is what you are going to school for, so just put it down as your major with your anticipated graduation date. At this point you will only have a cumulative GPA anyway, so there is no harm done here.
