 You could check for a more updated edition, but I recall "Commercial Real Estate Analysis and Investments 3rd Edition" by David Geltner ( https://mitcre.mit.edu/david-geltnergoes into it generally in the later half of his textbook. If you want to go deep in the weeds on the risk analysis side using excel (very non-re specific though), see "Credit risk modeling using Excel" by Gunter Löffler and Peter Posch which walks the reader through the process math-wise and excel-wise “almost” cell-by-cell. These are not perfect solutions to your question, but they could hold you over if nothing more on point comes in.
