Well I'm American so take my advice with a grain of salt but most of my European friends in your situation are planning on going to top MSF programs (Oxford, LSE, Cambridge, Bocconi, etc). This seems to be a very well-trodden path over there. Is this still a possibility for you or have deadlines passed/too costly, etc?
I'd also look into internships, either summer or off-cycle or try to find anything you can that is closely related. You got interviews with some top banks so you're obviously a qualified candidate, you might just have needed the practice that this year's interviews brought to turn interviews into offers for next time
