Structure for Experienced Consulting Resume (c. 2 years experience)

Should I still keep my resume to one page? I have had some colorful experience in the past two years.
I am in the process of updating my undergraduate resume, after two years in strategy consulting, whereby I have been a part of many interesting projects.
My Undergrad resume follows the typical structure of Education, Professional Experience, Leadership, Skills & Interests, and my Referees on one page.
Is it time to cut particular things like internships, sales roles, etc.?
Also curious to hear what sort of skills/technologies people think are highly desirable in the consulting field and should be called out on the resume.
