How hard is it to switch from FAANG to the quant side
I go to a top 5 CS undergrad and will go to grad school, just wondering if its doable.

Easy to switch to “quant dev” early on, and doable but not as easy (but I would say still high chance of doing it) to switch to quant researcher.
If you work at a FAANG firm you’ll receive many recruiting emails from some of the usual suspects in the HF space in your first few years.
Just remember it is a much riskier career path. And, while they pay well to start, if you are a top performer at FAANG it usually won’t be meaningfully different to start (and you’d have to get them to pay you for any shares not vested).
Quite possible for a quant dev role, FAANG staff are a regular source of recruiting. Competition is stiff though. There aren't as many quant dev roles as software engineer openings in the tech industry.
