Telling Manager about Health Issue?
I’m starting at a HF soon, and recently developed narcolepsy. Doesn’t usually impact work but very occasionally will fall asleep during meetings. how do I tell my manager about this while protecting myself from retaliation or firing?
Is there need to tell them unless someone notices? Also, out of curiosity, how did you develop it?
It’s well managed but noticeable when I have an off day, I’ll quietly just start shelling my head before I fall asleep. Not known how it was developed, but really hard to get a diagnosis, which finally happened this winter.

Whatever you decide, just be professional and diplomatic. You earned a job offer, which means you have the skill/talent to do the job. Keep being professional, and employers are obligated to accommodate.
Don't think you need to be self conscious about it. If you have a condition, just disclose it. They have to accommodate and understand.
